Artisan Planetary Mixers
The planetary mixer is the machine that changes job most often in a pastry kitchen. It whips cream in the morning, mixes biscuit dough at noon and beats egg white for meringue in the evening. It does all of that in one body because the tool changes: whisk, paddle and spiral hook all fit the same head.
The range runs from 10 litres to 80. The small bodies work on a bench or on their own feet; on the larger ones the bowl rises and lowers with assistance and the recipe is programmed from a touch panel. With bowl reduction sets, an 80 litre machine mixes a 20 litre batch with the same accuracy.

Ten and twenty litres
The two smallest bodies in the range. The BV 12 holds ten litres, the BV 22 twenty. Both come with three tools and the speed is set steplessly on a potentiometer. They work on their own feet or on a bench, a scale built for pastry kitchens, restaurants and catering.

Twenty litres to eighty
A range built for a pastry kitchen that wants the recipe to come out the same every day. The Digy touch panel programs mixing speed and duration phase by phase, and a hundred recipes stay in memory. The bowl rises with assistance and is lit inside, and the safety grid comes off with a single press.
