Energy consumption is the main driver of a bakery's CO2 emissions, and the oven is the largest consumer in the line. An oven scan can quickly assess your oven's saving potential. To go deeper, an end to end assessment analyses the consumption of every piece of equipment, and the findings turn into recommendations ranging from behavioural changes to line modifications.
One third of all the food produced for human consumption worldwide is lost or wasted, and sixty per cent of that is considered avoidable. Bread is one of the largest categories. Cutting waste lowers both direct emissions and indirect emissions at farm level, because the same bread then needs fewer ingredients. Scrap dough and leftover bread can be turned into sourdough and returned to the line.
Water is a key ingredient in bread and its quality is decisive for a bakery. With climate change, water stress is growing: rainfall patterns shift, average temperatures rise, and access to good quality water becomes more expensive. Reducing water use in the process is on the agenda, with methods for cleaning bakeware without water in development.
