Cooling and Proofing Cabinets
Temperature control starts with the water in the dough and ends with storing the finished product. Ferneto has separate equipment for every link in that chain: cooling the water, cooling under the bench, storing in a cabinet, and retarding the proof.
There are six groups. The water cooler and water meter sit at the start of the recipe, the cold counter and cold chamber in the production area, and the cold and proofing cabinets wherever the dough and the product wait.

Holding the water at the temperature you want
The RAF is cooling equipment for the bakery and pastry industries. It holds water at temperatures the professional defines, providing control in the execution of the recipe.

The cold counter is versatile industrial equipment: besides being a work furniture, it allows the storage of food products.

Speeding proof up or holding it back
The proofer cabinets hold the dough in a controlled climate. The retarder versions slow the proof down, so production can be spread into the next day.
