Fork Mixers
A fork mixer works without compressing the dough: the tool passes through it, folds it and aerates it. It is slower than a spiral but gentler, which is why it is chosen for speciality bread, viennoiserie and short pastry.
The range runs from 16 to 160 kilograms. The smallest works on a bench, the largest covers the daily output of an artisan bakery. The two-branch tool suits every dough, and the three-branch tool is recommended for pizza dough in particular.

The series used for speciality bread, viennoiserie and short pastry. On the MEW-EV version the bowl is driven by roller, so the recipe repeats exactly.
